I love everything about Fish Without a Doubt book! However, the best thing is the list from Chef Rick, telling you all the ingredients you need to have to make ALL the recipes. How helpful! There is nothing more annoying than going through your favorite chefs’ recipes, only to find that you don’t have that herb, or spice, or oil, and you can’t make dinner without another trip to the store.

The clam chowder is incredible. The lesson on court boullion is worth the price of the entire book. For the person who wanted pictures, there are plenty of pretty books by people like Ina Garten, with lovely photos and little substance. Fish Without a Doubt is for a person who wants to master the art of cooking fish. Thank you, Chef Rick.
